HOW TO MAKE BANH MI PATE
INGREDIENTS YOU WILL NEED:
1 Carrot
1 Cucumber
1 Baguette
Sliced pork (from deli)
Sliced head cheese (from deli)
Pate (store bought or homemade)
Mayonnaise
Fresh hot peppers (if you like it hot!)
Fresh Parsley
Pickling mixture:
1/3 cup of vinegar
2 tbsp of sugar
½ tsp Salt
HOW TO MAKE BANH MI PATE:
First take one carrot and peel the skin off and then cut the ends off. Then cut the carrot with the peeler to get thin slices. Take a knife and cut the slices into strips. Repeat the process with a cucumber by peeling off the skin and making thin strips. Save the unused part of the cucumber for another recipe. Now we need to make the pickling mixture.
Mix the vinegar, sugar, and salt into a bowl with a spoon and pour over the freshly cut carrot and cucumber. Let this mixture sit for 2 hours.
Toast a baguette and then cut open and add pate, mayonnaise, slices of roast pork (from the deli), head cheese (also from the deli), pickled vegetables, and hot peppers if you like your sandwich hot! Add a few sprigs of fresh parsley and you are done!

#19 How to make Pate
HOW TO MAKE PATE
INGREDIENTS YOU WILL NEED:
2.5 lbs of liver, heart, and kidney from a chicken
3 bay leaves
1 tbsp salt
½ onion chopped
2 garlic cloves chopped
2 sticks of butter melted
1 tsp of dried thyme
Pepper
Salt
HOW TO MAKE PATE:
First take 2.5 lbs of liver, heart, and kidneys from a chicken and boil with 3 bay leaves and 1 tablespoon of salt for 15 minutes. Be sure and mix all the ingredients together while it is cooking.
While that is cooking chop up ½ of an onion and 2 garlic cloves. When the liver, heart, and kidneys are done cooking drain them and put them in a food processor, add the garlic and onion as well and blend.
Take one stick of butter and melt it in the microwave for 30 seconds with 1 tsp of thyme and then add it to the processor and blend more. After the ingredients have been mixed well add the second melted stick of butter with a sprinkling of salt and pepper over the top. Mix again until the pate is smooth.

#18 How to make Kimchi
HOW TO MAKE KIMCHI
INGREDIENTS YOU WILL NEED:
1 Chinese cabbage
2 Tbsp Salt
1 Bunch of green onion
Kimchi Paste
1 tbsp sugar
2 tbsp salt
3 tbsp fish sauce
¼ cup Korean red pepper
6 garlic cloves
2 anchovy fillets
1 tsp sesame oil
½ tbsp chopped ginger
HOW TO MAKE KIMCHI:
You will need one Chinese cabbage, start by removing the stem with a knife and then chop the cabbage about 1 to 2 inches in size. Take the chopped cabbage and soak in a large bowl of water. To add a different texture to the kimchi we are cutting a quarter of the cabbage into thin slices. Go ahead and throw the slices into the water bowl as well. Then add 2 tablespoons of salt and mix it well with the cabbage. Let the cabbage soak for at least 2 hours. We place a weighted pan on top of the cabbage to help it stay under the water.
Now we can make the kimchi paste. We use a food processor to mix our paste but you can use a mortis and pestle if you don’t have a processor. Combine the sugar, salt, fish sauce, Korean red pepper (or any dried hot pepper you like), garlic, anchovies, sesame oil, and ginger in the bowl and then blend together until it forms a nice thick paste.
After 2 hours drain the cabbage well and set it aside. Cut up the green onion into 2 inch long strips and add it to the cabbage. Now take the kimchi paste and mix it with the cabbage and green onion. We wear gloves since the kimchi paste has spicy peppers in it. If you don’t wear gloves be sure not to touch your face or eyes! Mix well, we find adding the paste in increments helps to incorporate it better. After the cabbage and paste has been mixed well store it in a glass container (plastic is okay if you don’t have glass) pack down the mixture with your hand and let it ferment at room temperature for 24 to 48 hours. After which you can store it in the fridge.

#17 How to make Summer Rolls the NFV Way
HOW TO MAKE SUMMER ROLLS
INGREDIENTS YOU WILL NEED:
Small pot of boiling water for noodles
1/3 cup of almonds (or any other nut you have)
A few lettuce leaves
A few sprigs of parsley
1 egg
1 bundle of soba noodles
Half avocado
4 shrimp
Preshredded dried nori
1 pack of rice sheets
Dipping Sauce:
4 tbsp hoisin sauce
3 tbsp peanut butter
1-2 tbsp of milk
HOW TO MAKE SUMMER ROLLS:
First put a small pot of water on the stove and set it on high to boil. Then take a 1/3 cup of almonds or any other nut you have and roast them on high in a small frying pan on the stove for 3 minutes. While the nuts are roasting go ahead and cut thin slices of lettuce, we use 3 or 4 large leaves. Then chop up some parsley and set aside.
The almonds are done now and can be put in the food processor to grind them up. Set the ground nuts aside in a small bowl.
Take 1 egg and crack in a small bowl and add a little salt and pepper, then whisk. Use the same frying pan from roasting the nuts and give it a quick spray with cooking oil and pour the egg into the pan on medium heat covered for 3 minutes. The water should be boiling at this point so go ahead and throw in the soba noodles for 3 minutes. When the egg is ready uncover and flip it in the pan and let it cook for another minute uncovered. Then take the cooked egg and cut into slices and set aside.
The noodles will be done and can be drained, have a bowl of ice water set aside to cool the noodles in while you prepare the rest of summer rolls. Once the noodles are cooled place them on a plate and set aside.
Now we are going to make the dipping sauce, use the frying pan from earlier on low to medium heat and add 4 tbsp of hoisin sauce and 3 tbsp of peanut butter. Mix them together well and then add 1-2 tbsp of milk depending on how thick you want your dipping sauce. Then place in a bowl and set aside.
Take half an avocado and cut into thin slices. We cut the avocado in the skin and then squeeze the slices out afterwards.
We can prepare the shrimp now, peel the skin off and devein. The shrimp only need boiling for 2 minutes and then they can be rinsed and chopped up.
Now we can start to assemble our specialty summer rolls since everything has been prepared. Take a rice sheet and gently dip into luke warm water several times. Don’t worry the rice sheet will continue to soften after you take it out of the water. Now you can add all the ingredients. We make ours by adding the soba noodles, parsley, lettuce, avocado, almonds, egg, nori, and shrimp in the middle of the rice sheet and then folding the bottom third up and over the ingredients. Then fold the sides in and roll up the rest of the way. Repeat the process and eat as many as you like, don’t forget to dip them in the yummy sauce you made!

HOW TO MAKE HOMEMADE HUMMUS
INGREDIENTS YOU WILL NEED:
1 tbsp sesame seeds lightly roasted
3 tbsp olive oil
½ tsp salt
1 can (15.5oz) Garbanzo Beans
3 tbsp of lemon juice
2 cloves of garlic
HOW TO MAKE HOMEMADE HUMMUS:
First we are going to make the tahini for the hummus. You will need to lightly roast 1 tablespoon of sesame seeds in a frying pan. When they start to pop take off the heat and put in a food processor. Add 3 tbsp of olive oil and mix together in the processor.
Now add ½ tsp of salt, 1 can of garbanzo beans and mix again until blended together then add 3 tbsp of lemon juice and 2 cloves of garlic. Mix again until well blended.
The hummus can be served with sliced bread our recipe number 4.

#15 How to Butcher a Chicken
HOW TO BUTCHER A CHICKEN
YOU WILL NEED:
1 Whole raw chicken
1 Sharp knife (very important!)
HOW TO BUTCHER A CHICKEN:
First lift the chicken from one wing and cut it at the joint. Then repeat on the other wing. Then lift the chicken by the leg and cut at the hip joint. Don’t worry about being perfect, just cut as near to the joint as possible.
Once the leg and thigh have been removed start cutting into the carcass to remove the breast meat. Try and cut as close to the carcass as you can to remove the most meat.
You can separate the leg and thigh by cutting at the joint.
Remove any excess skin if you need to.

#14 How to make Nacho Dip
HOW TO MAKE NACHO DIP
INGREDIENTS YOU WILL NEED TO MAKE NACHO DIP:
2 Medium sized tomatoes diced approximately 1 ½ cups
1 cup of onion diced
¾ cup of bell pepper diced
2 tsp lemon juice
1 tsp sesame oil
3 tsp olive oil
2 tsp of pesto
½ cup of garbanzo beans (Or any other bean you may like)
HOW TO MAKE NACHO DIP:
First take 2 medium sized tomatoes and dice them up. Then take and dice up 1 cup of onions. And dice up ¾ cup of bell pepper. Put the tomatoes, onion, and bell pepper in a bowl and then add a dusting over the top of salt and pepper. Next add 2 tsp of lemon juice, 1 tsp of sesame oil, 3 tsp of olive oil, 2 tsp of pesto, and ½ cup of garbanzo beans.
Mix thoroughly and your dip ready to be served.

INGREDIENTS YOU WILL NEED TO MAKE HONEY MUSTARD DRESSING:
¼ Cup of honey
¼ Cup of Dijon mustard
½ Cup of mayonnaise
1 tsp of ground pepper
1 tsp of mustard powder
HOW TO MAKE HONEY MUSTARD DRESSING:
First mix together the honey, Dijon mustard, and mayonnaise in a bowl, be sure to mix well to incorporate all the honey. Then add the ground pepper, and ground mustard and mix again.
And you are done!

#12 How to make Lime Sorbet
HOW TO MAKE lime sorbet
INGREDIENTS YOU WILL NEED TO MAKE LIME SORBET:
1 Cup of lime juice for a really strong sorbet OR ½ cup of Lime juice for a more mild sorbet
Lime zest
1 cup of water
1 cup of sugar
HOW TO MAKE LIME SORBET:
First we are going to extract the juice from our limes. We use fresh limes when we can otherwise just use lime juice from a bottle. Your local supermarket should carry this.
We are using a cup of lime juice for this sorbet but beware it will knock your socks off. Use ½ cup of lime juice if you want a more mild flavored sorbet.
Take 1 cup of water and pour it in a pot, then add the desired amount of lime juice you want, and 1 cup of sugar. Heat the contents of the pot up on the stove until it starts to boil, then remove from the pot and transfer to a container.
Give the mix a quick stir with a spoon or whisk and then add some lime zest. If you don’t have any zest on hand, just skip this step. Then place the container with the mix in your freezer and freeze overnight.
The next day take the mix and break it up with a fork or spoon and place it in a stand mixer. Beat the mixture on high for a minute and then transfer the slushy sorbet into a container and freeze for another four hours.
After four hours the sorbet is ready to be served. You can replace the lime in this recipe with any other fruit or flavor you like. The possibilities are endless.

#11 How to Make Home Made Pizza
HOW TO MAKE Homemade Pizza
INGREDIENTS YOU WILL NEED TO MAKE HOMEMADE PIZZA:
Dough:
1 ½ cup of luke warm water
1 tsp yeast
1 tsp sugar
2 ½ cups of flour
2 tsp salt
(This will make two pizzas, we refrigerator one for up to a week so we can have pizza any time)
Pizza Sauce:
1 tsp salt
1 tsp ground pepper
3 gloves of garlic
1 tsp of lime juice
1 tsp of our everything spice
Mozzarella cheese (as much or as little as you like)
HOW TO MAKE HOMEMADE PIZZA:
First we are going to make the dough for the pizza, we use the same recipe as our bread dough, Video #4
To start microwave 1½ cup of water for 30 seconds to get the right temperature and then pour the water into a bowl and add 1tsp of yeast and 1tsp of sugar. Let this rest for 10 mins to allow the yeast to activate.
After the timer goes off add 2 ½ cups of flour and 2 tsp of salt, knead the dough until it starts to stick to itself and not the bowl. Then place it in an oiled container for 2 hours to rest.
After two hours the dough is ready to cut in half and shaped into pizza crust. We refrigerator one half of the dough so we can have pizza later in the week. Shape the dough by working it with your hands, press it outward to slowly shape a circle. If you are not comfortable tossing the dough just use a rolling pin. Be careful not to overwork the dough or it will tear. Set that aside.
Now we are ready to make the pizza sauce. Use 1 standard can of diced tomatoes and drain off the excess liquid. Pour into a blender and add 1tsp salt, 1tsp ground pepper, 3 garlic cloves, 1tsp lime juice, and 1tsp of our everything spice. Once the mixture is fully blended you are done!
Now slice or grate your preferred cheese, we like mozzarella on our pizza.
Spray a pizza pan or a cookie sheet and place the formed dough on the pan. Smooth the dough out and then add your pizza sauce. Now place the cheese slices on top and any other toppings you may like.
Before the pizza goes in the oven put some olive oil on the crust to help it brown better. Cook the pizza for 15 minutes in a 480 degree oven.
