HOW TO MAKE Homemade Pizza
INGREDIENTS YOU WILL NEED TO MAKE HOMEMADE PIZZA:
1 ½ cup of luke warm water
1 tsp yeast
1 tsp sugar
2 ½ cups of flour
2 tsp salt
(This will make two pizzas, we refrigerator one for up to a week so we can have pizza any time)
1 tsp salt
1 tsp ground pepper
3 gloves of garlic
1 tsp of lime juice
1 tsp of our everything spice
Mozzarella cheese (as much or as little as you like)
HOW TO MAKE HOMEMADE PIZZA:
First we are going to make the dough for the pizza, we use the same recipe as our bread dough, Video #4
To start microwave 1½ cup of water for 30 seconds to get the right temperature and then pour the water into a bowl and add 1tsp of yeast and 1tsp of sugar. Let this rest for 10 mins to allow the yeast to activate.
After the timer goes off add 2 ½ cups of flour and 2 tsp of salt, knead the dough until it starts to stick to itself and not the bowl. Then place it in an oiled container for 2 hours to rest.
After two hours the dough is ready to cut in half and shaped into pizza crust. We refrigerator one half of the dough so we can have pizza later in the week. Shape the dough by working it with your hands, press it outward to slowly shape a circle. If you are not comfortable tossing the dough just use a rolling pin. Be careful not to overwork the dough or it will tear. Set that aside.
Now we are ready to make the pizza sauce. Use 1 standard can of diced tomatoes and drain off the excess liquid. Pour into a blender and add 1tsp salt, 1tsp ground pepper, 3 garlic cloves, 1tsp lime juice, and 1tsp of our everything spice. Once the mixture is fully blended you are done!
Now slice or grate your preferred cheese, we like mozzarella on our pizza.
Spray a pizza pan or a cookie sheet and place the formed dough on the pan. Smooth the dough out and then add your pizza sauce. Now place the cheese slices on top and any other toppings you may like.
Before the pizza goes in the oven put some olive oil on the crust to help it brown better. Cook the pizza for 15 minutes in a 480 degree oven.
HOW TO MAKE FRENCH DRESSING
INGREDIENTS YOU WILL NEED TO MAKE FRENCH DRESSING:
1/3 cup of ketchup
1 /4 cup of sugar
1 /4 cup of vinegar
1 /4 cup of vegetable oil
1 teaspoon of paprika
1 teaspoon of Worcestershire sauce
HOW TO MAKE FRENCH DRESSING:
First mix together the ketchup, sugar, and vinegar in a bowl with a whisk or spoon. Then add the paprika and Worcestershire sauce. Mix the ingredients again and then slowly add the vegetable oil until everything has been mixed well.

HOW TO MAKE HOMEMADE BURGERS AND FRIES
INGREDIENTS YOU WILL NEED TO MAKE HOMEMADE BURGERS
4 Lbs of ground beef
1 / 4 cup bread crumbs
3 tsp salt
2 tsp of pepper
4 tsp of worcheshire sauce
PREPERATION OF BURGERS AND FRIES:
We make a lot of burgers with this recipe and our goal is to freeze the extras so we have quick and easy burgers whenever we want!
First you will need 4lbs of ground beef and a 1/4 cup of Bread Crumbs. We grind our own beef but you can use pre-ground beef from the supermarket. Start by mixing all the ingredients together and slowly adding the bread crumbs, once everything is mixed well we are ready to make the burgers. Prepare a cookie sheet with spray oil and set aside.
We started using a burger press to make sure all the burgers were consistent in size. But feel free to use your hands to shape the patties. Try not to compact the burger too much and when you have the amount of meat you like place the formed burger on the cookie sheet. Repeat this process until you have run out of meat.
Now we are ready to make the fries. Set your burner to #8 and add 5 cups of corn or vegetable oil to a large pot. While the oil is heating slice your condiments, onion, tomato, lettuce, cheese, and anything else you like on your burger.
Now take 2 large potatoes and peel the skin off then cut them julienne style about a 1/4 thick. Be sure to use a paper towel to remove excess moisture before you fry your potatoes.
We can get the burgers started now; since they are fresh and not frozen they will cook quickly. Take a griddle or large frying pan and set it on high.
Check your oil by holding a potato in the oil, if bubbles come off then you are ready to start frying, carefully add all your potatoes to the oil, try not to splash yourself as the oil is really hot. Fry the potatoes for 8 minutes on #8, now the griddle or frying pan will be hot enough to throw the burgers on, since the burgers are not frozen we will only need to cook them for 4 minutes on each side, or however you prefer your red meat. After you have flipped the burger once go ahead and place your cheese on the burger and cover with a spare pot lid.
Meanwhile toast the buns, we use the extra space on our griddle or you can just pop them in your toaster oven. My husband enjoys and egg on his burger, so if you do too, go ahead and cook one up!
Since our burger buns are usually frozen to prolong their life span we cut them open after a minute or so to toast them better.
After the timer has gone off for the french fries give them a mix and cook for another four minutes.
While the fries are finishing up, prepare your plates with the buns, and toppings.
After the timer has gone off again for the fries, take them out of the hot oil, if you don’t have a metal mesh spoon, use tongs or the largest spoon you own that drains. We place the fries on another paper towel to help remove any excess oil. Be sure to add salt and then you are ready to serve.
The burgers should be done; we usually take a peek inside to double check. Top the buns with your freshly cooked burger and prepared condiments.
Don’t forget about all the extra burgers, place them in the freezer overnight and then bag them up the next day. When you are ready for a burger, simply cook for 7 minutes on each side covered at all times!

HOW TO MAKE mushroom and cheese
INGREDIENTS YOU WILL NEED TO MAKE MUSHROOM
AND CHEESE QUESADILLAS:
Mushrooms (2 cups)
Cheese, grated (2 ½ cups)
Tortillas (2 discs)
PREPERATION OF QUESADILLAS:
Rinse the mushrooms well and squeeze out as much moisture as you can. This will help your quesadillas stay dry after they have cooked. Put the mushrooms on a griddle, or if you don’t have a griddle use a large frying pan. Set the temperature to medium high. Cut the mushrooms up into bite size pieces and let them cook for a few minutes. Then place your tortillas on the griddle to brown, you can go ahead
and grate the cheese while the tortillas are cooking.
At this point (five to ten minutes from starting) you are ready to assemble the quesadillas. With the tortillas still on the griddle lay out the grated cheese and place the mushrooms on top. Then fold the tortilla in half and let sit for another 30 seconds.
The quesadillas are ready now, remove from the griddle and served with sour cream and salsa.

How to make homemade pasta
INGREDIENTS YOU WILL NEED TO MAKE HOMEMADE PASTA:
Flour (3 cups)
Salt (2 tsp.)
HOW TO MAKE HOMEMADE PASTA:
First you will need to mix the pasta dough, we use a stand mixer but you can mix the dough by hand if you like. Put 3 cups of flour in the mixing bowl and add 2 tsp. of salt mix together and then add each egg one at a time slowly.
We use a flat beater with our mixer and within a few minutes the dough is ready when it starts sticking to itself. Place some flour on a work surface and flatten the dough to a thickness of 1 inch by hand and then cut into four equal pieces. Take each piece and flatten it out a little more and make sure they are fully coated with flour.
Now we are ready to roll out the pasta dough, we have an attachment for our mixer that rolls out the dough for us. First set the roller to the thickest setting and run each piece of the dough through once. Use flour on the pieces so they won’t stick. Then repeat the process 2-4 times, be sure to fold the dough in half before running it through again. This process will knead the dough and make it a smooth texture. (note: if you don’t have a rolling attachment for your mixer, use a rolling pin to work the dough. )
After you have kneaded the four pieces of dough reset the roller to the thinnest setting (or however thick you enjoy your pasta) and run each piece through the roller once. Be sure to set aside the dough and flour liberally to prevent the dough from sticking while you are working with it.
Now switch out the roller for the spaghetti attachment. Then prep your dough by cutting in half to make two smaller lengths. Run the dough through the attachment and you will have fresh homemade pasta! We mix the fresh pasta with more flour to help it stay separated. (note: if you don’t have a spaghetti roller use a pizza cutter to make chunky sized pasta, it will still taste great and have a gourmet look!)
To cook the pasta add a pinch of salt and oil to boiling water and then add the pasta to cook for 5 minutes. After which, drain the pasta and use whatever sauce you like. We portion off our extra pasta and freeze it for a yummy meal later.

HOW TO make pesto
INGREDIENTS YOU WILL NEED TO MAKE PESTO:
Olive Oil (1/4 cup)
Basil leaves (2 cups)
Lemon juice (2 TBSP.)
Pine nuts (1/4 cup)
Grated parmesan cheese (1/4 cup)
Garlic (5 cloves)
HOW TO MAKE PESTO:
First you will need fresh basil leaves, store bought or garden fresh will do just fine. Be sure to rinse the leaves off before you use them. Next grate the parmesan cheese and set it aside.
Now we are ready to mix the pesto, we use a food processor but you can use a mortis and pestle if you like. Take the pine nuts and grate them up first, then add the garlic, olive oil, and lemon juice and process again. Now you are ready to add the basil leaves. Once the basil leaves are fully integrated into the mix you can add the grated parmesan cheese.

HOW TO TOMATO CAPRESE
INGREDIENTS YOU WILL NEED TO TOMATO CAPRESE:
5 basil leaves
2 large slices of mozzarella cheese
Our Balsamic Vinaigrette

HOW TO MAKE TOMATO CAPRESE:
First you will need to make our balsamic vinaigrette from our video #1 on the YouTube channel if you don’t already have it standing by in the fridge!
Grab a plate and put a nice helping of the balsamic vinaigrette on the plate. Then take the tomato and cut into ¼ thick slices, you should be able to get four to six slices.
Next slice the mozzarella cheese and then cut into triangles. You will need five basil leaves, we picked ours from the garden but you can use store bought basil too.
Time for assembly, start with a tomato slice on top of the balsamic vinaigrette and then layer in the cheese and basil leaves until you have used all the ingredients. We topped out tower of yumminess off with a caper (to hide the toothpick holding the tower together)

HOW TO make bread
INGREDIENTS YOU WILL NEED TO MAKE BREAD:
Water (1 ½ cups)
Yeast (1 tsp.)
Sugar (1 tsp.)
Flour (2 ½ cups)
Salt (2 tsp.)
HOW TO MAKE BREAD:
We use a stand mixer to make our bread dough but you can mix and knead the dough by hand if you want. We first combine 1 ½ cups of luke warm water with 1 tsp. of yeast and 1 tsp. of sugar. You have to let that mixture set for 10 minutes while the yeast activates. We found that microwaving tap water for 30 seconds on high will produce the right temperature.
After the yeast has activated (there should be a beige puffy looking cloud on top of the water) you can add 2 ½ cups of flour and start mixing. Then add the 2 tsp. of salt. Knead this mixture for about minute or until the dough stops sticking to the bowl.
Remove the dough from the bowl and let it sit covered in a container (can be anything from a bowl with towel on top to plastic container with lid) for two hours. After two hours the dough should have doubled in size.
This is our go to bread recipe & gets repurposed for many things in our kitchen, here are some options:
Dough will make two baguettes, loosely form the dough into two baguettes and let sit for another 20 minutes on an oil sprayed baking sheet, ( a cookie sheet or bread pan will work great) then place in the oven at 400 degrees Fahrenheit and bake for 28 minutes. After which you can brush the top with water to get a crispy crust and then bake for another 7 minutes or until golden brown.
Place dough into an oil sprayed glass or metal baking dish with sides and let it sit for 20 minutes. After which you will place the dish into the oven at 400 degrees Fahrenheit and bake for 30 minutes or until golden brown.

HOW TO debone and butterfly a chicken

HOW TO DEBONE AND BUTTERFLY A CHICKEN
First you will need to sharpen your knife to make sure it will cut well. Then take the cutting board and lay the whole chicken out breast down on the board. Massage the chicken joints and break them if you can. The idea is to loosen up the joints so it will be easier to move and cut them.
Flip the chicken over and take the knife and cut along the left or right of the breast bone to remove the meat from the bone. You will need to work in small cuts to get as much meat as possible off the bone. Repeat this process on the other side. Once you have the meat free of the bone cut along any meat that remains and remove the carcass. Set aside these pieces of bone to make soup stock out of or freeze to make soup stock later.
Next take the knife and cut off the wings, the bones are cumbersome to take out and we like to save our chicken wings for another meal.
Moving onto the thigh and leg bones, find where the thigh bone is protruding out of the chicken and grab hold with one hand, then take your knife with the other hand and begin working with the knife around the bone to separate the meat from the bone. Keep going down the bone and over the joint and down the leg bone, you are basically turning the chicken inside out. Once you have the bone almost free of the leg meat hold onto the leg meat with one hand and the bone with the other and give a quick pull, the bone should pop out the rest of the way and you can cut it free.
All the bones have been removed from your chicken, now you can push the thigh and leg meat back into the skin and you are ready to cook your fully deboned and butterflied chicken. Enjoy!

HOW TO MAKE FLATBREAD PIZZA
This recipe will make two pizzas
INGREDIENTS YOU WILL NEED TO MAKE PIZZA DOUGH:
White flour (2 cups)
Salt (1 tsp.)
Baking powder (1 tbsp.)
Vegetable shortening (1 tbsp.)
Whole milk (3/4 cup)
Mix together the flour, salt, baking powder, and vegetable shortening in a stand mixer or by hand. Then slowly add the milk. The dough will start to stick to itself and become lumpy. Once you know you can form it into a ball you can stop mixing. Take the dough and roll together in a ball and then cut in half. Take one half of the dough and place it on your work surface. You are ready to roll out the dough, don’t forget to use flour while you are working with the rolling pin so it won’t stick. Once you have nice dough that is 1/4″ to 1/8″ thick you can set it aside and make the pizza sauce.
INGREDIENTS YOU WILL NEED TO MAKE PIZZA SAUCE:
Diced tomatoes with excess liquid drained off (1 can)
Garlic (3 cloves)
Lime juice (1 tsp.)
Salt (1 tsp.)
Ground pepper (1 tsp.)
Everything spice (1 tsp.)
Open a can of diced tomatoes and drain off the excess liquid, pour diced tomatoes in a blender and then add the garlic, lime juice, salt, ground pepper, and our signature Everything spice. Give the mix a quick blend to puree the tomatoes. Your pizza sauce is now ready.
PREPERATION FOR BAKING
Get a pizza pan or cookie sheet and use cooking spray so it won’t stick, then take the pizza dough you have set aside and stretch it on the pizza pan. You should only have to pull the edges an inch or so to make it fit. Use a spoon and spread the pizza sauce out over the dough and then add your cheese. You can slice the cheese or grate it. Once you have all the cheese you want sprinkle some oregano on top, and add olive oil to the edges to help brown the dough in the oven.
Put the pizza in a pre-heated oven at 480 degrees for 15 minutes. When the cheese is brown and bubbly like the above picture you are ready to enjoy delicious flat bread pizza, Enjoy!
